People all over the world, enjoy grilling their meats and savor them with assortment of breads, vegetables, salads and other accompaniments. In Mediterranean regions and the Middle East, kabobs are made from a variety of meats, assortment of marinades and different techniques, ranging from use of wooden or metal skewer, on the grill, in clay pots, in the oven or in a pan. 
 
In this class we start with the preparation of Mirza Ghasemi, a traditional food of northern Iran, roasted eggplants and garlic with eggs, served on Lavash bread; Fattoush, Jordanian bread salad of fresh vegetables and lemon Za'atar dressing, served with Shish Taouk, Lebanese skewered chicken in yogurt marinade, grilled to a beautiful golden color; make Kabob koubideh, Persian ground beef and spices wrapped on a flat metal skewer, grilled and served with charred tomatoes, fresh basil and onions on sour dough flat bread; Shishlik, a favorite of the whole Mediterranean region, chunks of tender lamb marinated in  savory onion marinade and grilled with fresh vegetables, served with bread; end the evening with Turkish dessert of Kaymaklı Kuru, cream filled apricots garnished with pistachios
